Hot Potato Salad
Ingredients:
8 medium potatoes - slice into thick slices
1 pound of bacon - fry until crisp
(my daughter bakes her bacon till crispy)
1 cup mayonnaise (you can use Miracle Whip)
1/2 cup chopped onions
1 pound american cheese - cut into slices (Velveeta is fine)
I refrigerate the cheese, it's easier to slice
Cook potatoes until almost done (boiled about 15 minutes) - this cuts down on baking time.
Drain potatoes.
Spray a casserole pan with cooking spray.
Layer potatoes, onion, cheese, mayonnaise, and crumbled bacon into alternating layers. (At least 2 layers thick. Better if there is more.)
Make sure to finish with a layer of bacon.
Bake at 350 degrees for 30 - 40 minutes (until cheese is melted and bubbly but not burnt)
Can serve hot or warm. Easy to reheat.
